Directions:
- Bring a large pot of water to a boil.
- Add 1 tsp salt and 1 tsp oil.
- Cook 2 cups of pasta according to package instructions.
- Drain and set aside, reserving ½ cup of pasta water (stalk).
- In a large pan, heat 2 tsp oil over medium heat.
- Add 1 tbsp finely chopped garlic and sauté until fragrant.
- Add onions, carrots, capsicum, and boiled corn.
- Season with salt and pepper, and cook until vegetables are tender.
- In a separate saucepan, melt 3 tbsp butter over medium heat.
- Add 3 tbsp all-purpose flour and stir continuously to form a roux.
- Gradually whisk in 2 cups of milk, ensuring there are no lumps. Cook until the sauce thickens.
- Add the cooked vegetables to the white sauce.
- Season with salt, black pepper powder, mixed herbs seasoning, and red chili flakes.
- Add and stir ¾ cup cheddar cheese and ¼ cup mozzarella cheese until melted and smooth.
- Toss the cooked pasta in the sauce, adding reserved pasta water if needed to reach the desired consistency.
