    Directions:

    • Heat the olive oil in a tagine or heavy-bottomed pot over medium heat. 
    • Add the lamb chunks and brown on all sides. 
    • Remove and set aside.
    • In the same pot, add the chopped onion and garlic. Sauté until softened.
    • Stir in the ginger, cumin, cinnamon, turmeric, paprika, black pepper, and salt. 
    • Cook for 1-2 minutes until fragrant.
    • Return the lamb to the pot. 
    • Add the chicken broth, diced tomatoes, apricots, olives, and carrots. Stir to combine.
    • Bring to a boil, then reduce the heat to low. 
    • Cover and simmer for 1.5 to 2 hours, until the lamb is tender.
    • Garnish with chopped cilantro and serve hot with couscous.
