    Directions:

    • Blend onions to a paste.
    • Add to hot oil.
    • Fry until color changes.
    • Add chicken and cook until color changes.
    • Add coriander powder, red pepper powder and salt.

    • Add kalonji, fennel seeds and fenugreek seeds.
    • Saute for a min and add yogurt.
    • Cover and let cook until chicken tenders and oil separates.
    • Sprinkle some green and red chilies.

    Directions:

    • Heat oil in a pan.
    • Fry onions until golden.
    • Add chicken and ginger garlic paste.
    • Cook for 5 mins.
    • Add whole spices, red pepper powder, coriander powder and turmeric powder.
    • Saute for a couple of mins.
    • Cover and let cook until chicken tenders.
    • Add boiled chickpeas.
    • Cook for 15 mins on medium-low flame. 
    • Add crushed black pepper and garam masala powder.
    • Let simmer for 5 mins on low flame.
    • Sprinkle some coriander and sliced green chilies.
    • Serve hot with naan.

    Chicken Jalfrezi

    • In a bowl, marinate chicken with salt, red pepper powder, black pepper, chili sauce and ketchup.
    • Marinate for 1 hour.
    • Whisk eggs in a bowl.

    • Cut into cubes and set aside.
    • Heat some oil in the same pan.
    • Add capsicums and onions.
    • Saute for 2 minutes or until soft.
    • Set aside.
    • Heat oil in a wok.
    • Add garlic paste followed by tomatoes.
    • Saute for 5 mins.
    • Add marinated chicken.
    • Let cook until chicken tenders and oil separates.
    • Add fried veggies and omelet cubes.
    • Sprinkle some chopped coriander and green chilies. 
    • Serve hot with rice.
  • Kesari Chicken

    • Heat oil in a pan.
    • Fry onions until golden brown.
    • Remove from oil.
    • Crush onions, add butter, cardamoms, almonds and cumin powder.
    • Set aside.
    • Saute chicken in the oil until golden brown.
    • Add yogurt, garam masala powder, nutmeg and mace powder, coconut and saffron.
    • Saute for 1-2 mins.
    • Add onion mixture.
    • And let cook on low flame until chicken is tender.
    • Sprinkle some green chilies and fresh coriander.
    • Let simmer for a min.
    • Serve hot with chapatis or naan.
  • Chole Bhature

    Chole Bhature

    An exotic, spicy Punjabi Cuisine that consists of spicy, tangy white chickpea curry served with crisp, fried and puffed bread known as Bhature.

    This crispy puffed bhature makes an excellent combination with the delicious and flavorful chana masala (chickpea curry) most often eaten at breakfast.

    However, I made this hearty meal for lunch and really loved it.

    Here’s the recipe for the Delicious Chole Bhature;

     

    Directions:

    For Bhature:

    • Add all the ingredients in a bowl and mix well.
    • Knead a soft dough.
    • Grease with oil and let rest for 1-2 hrs.
    • Make small dough balls and roll into flat breads with the help of oil. (do not roll the breads too thin)
    • Heat oil, fry until golden. (press the puris/bhature gently while frying to help puff it up)

    For Chanay:

    • Add baking soda in water and let chickpeas soak overnight or 5-6 hrs.
    • Drain soaked chickpeas.
    • Prepare 2 cups of black tea.
    • In a pressure cooker add soaked chickpeas, whole spices (mentioned in ingredients) and garlic cloves.
    • Pour in the prepared black tea in about 500 ml of water or as required.
    • Pressure cook for about 1 hour or until very soft.
    • Heat oil in a pan.
    • Add onion paste and cook for 3-4 mins.
    • Add ginger garlic paste and mix well.
    • Add tomato puree and cook for 2-3 mins.
    • Add green chilies, ginger, cumin powder, coriander powder, red pepper powder.
    • Add some water and let cook until oil separates.
    • Add in the boiled chickpeas and mix well.
    • Add a cup of water and let cook for 8-10 mins.
    • Add water if required to adjust the consistency)
    • Add garam masala powder and kasuri methi.
    • Let simmer for 2-3 mins.
    • Dish out, sprinkle on some fresh coriander.
    • Enjoy with hot puffed bhature.
  • Palak Chicken

    • Heat oil in a pan.
    • Fry onion until golden.
    • Add ginger garlic paste and tomatoes.
    • Saute for a min.
    • Add chicken and saute for 1-2 mins.
    • Add the rest of the ingredients except spinach.
    • Add spinach when the chicken is half done.
    • Cover and let cook on medium flame until chicken tenders and oil separates.
    • Add quarter cup water if required.
    • Sprinkle thinly sliced ginger and green chilies.
    • Serve with rice or chapatis.

    Chicken Methi is a delightful aromatic and delicious tomato based chicken curry that combines tender chicken pieces with the unique bitterness of fresh fenugreek (methi) leaves. This appetizingly flavorful and toothsome Chicken curry with fenugreek, makes a delicious family dinner.

    Here’s the recipe for Aromatic Homemade Chicken Methi;

     

    Directions:

    • Heat oil in a pan.
    • Add sliced onions and fry until light brown in color .
    • Add ginger garlic paste, turmeric powder, red pepper powder, red pepper flakes, salt.
    • Mix well.
    • Add tomatoes and let cook for 5-6 mins on medium flame.
    • Add chicken.
    • Cook until water dries off completely and oil separates.
    • Add chopped methi/fenugreek and let cook for 5 mins.  (Add water accordingly, if needed for gravy)
    • Let simmer for 4-5 minutes on low flame.
    • Serve hot with plain boiled rice or chapatis.
  • Eggplant Potato Bites

    Eggplant Potato Bites

    This self made appetizer or evening snack turned out really great and was too delicious.

    Made these easy appetizing n yummy Eggplant Potato Bites from Mashed potatoes sandwiched between two slices of eggplant, coated with flour, beaten eggs n seasoned bread crumbs, then shallow fried them until crisp golden.

    These delicious Eggplant Potato Bites can be served as an evening snack or an appetizer.

    Here’s the recipe for Eggplant Potato Bites;

     

    Directions:

    • Slice eggplants and lay them on a clean kitchen towel or paper towel.
    • Generously salt both the sides of eggplant slices and let rest for 15 mins. (to draw out excess water)
    • In a bowl, mash potatoes.
    • Add carom seeds, cumin, salt, red pepper powder, red pepper flakes and mix well.
    • Wipe off water and salt from eggplant slices.
    • Pick up 2 equal sized slices and sandwich a tablespoon of potato mixture in between the eggplant slices.
    • Freeze for 15-20 mins to set.
    • Place flour and 2 beaten eggs in separate bowls.
    • Place seasoned bread crumbs in a bowl.
    • Remove the eggplants from the freezer.
    • Coat with flour, eggs and then in seasoned bread crumbs respectively.
    • Coat once again with flour, egg n bread crumbs for more crisp.
    • Heat oil in a wok and fry the stuffed eggplants until golden.
    • Serve with your favorite sauce.

    • Fry marinated chops on medium-low flame until brown.

    • In a separate pan heat 3 tbsp. of corn oil.
    • Add garlic paste, tomato paste, oregano, rosemary, yogurt, salt and pepper.
    • Saute for about a minute.
    • Add tomatoes and let simmer until tomatoes soften.
    • Add fried chops to the prepared sauce while the sauce is simmering.
    • Let simmer for 10 minutes or until the chops are tender.
    • Garnish with mint leaves and lemon slices.

    • Marinate fish with all the ground spices overnight.
    • Shallow fry until golden and crispy.

    • Heat ghee or oil in a large pot over medium heat along with the leftover fried fish oil.
    • Add onion, garlic, and ginger.
    • Sauté until the onion is golden brown.
    • Add salt, cumin, coriander, turmeric, lime powder, tomato paste, and dried lime.
