Directions:

  • Heat olive oil in a large pot over medium heat. 
  • Add onion, carrots, and celery, sautéing until softened, about 5 minutes.
  • Stir in garlic, cooking for 1 minute until fragrant.
  • Pour in the chicken broth and add thyme, bay leaf, salt, and pepper. 
  • Bring to a boil.
  • Add the noodles and cook for 6–8 minutes until tender.
  • Stir in the shredded chicken and cook until heated through. 
  • Adjust seasoning if needed.
  • Remove the bay leaf and serve hot, garnished with fresh parsley if desired.
