Here’s the recipe for Aromatic and Toothsome Hainanese Chicken Rice;

 

Directions:

  • Rub the chicken with salt and rinse thoroughly. 
  • Boil water in a large pot, add ginger and green onions, then poach the chicken for 35–40 minutes. 
  • Once cooked, submerge in ice water for 5 minutes, then pat dry.
  • For the rice, sauté garlic and ginger in chicken fat. 
  • Add rice and cook for 2 minutes. 
  • Add chicken broth, cover, and cook until rice is fluffy.
  • Serve the sliced chicken over rice with sauces on the side.
