Directions:

  • Cook macaroni according to package instructions. 
  • Drain and set aside.
  • In a skillet, heat olive oil over medium heat. 
  • Add onion and garlic, sauté until fragrant.
  • Add ground meat (if using) and cook until browned. 
  • Stir in taco seasoning.
  • Mix in black beans, corn, and diced tomatoes. 
  • Simmer for 5 minutes.
  • Fold in cooked macaroni and half of the cheese. 
  • Mix well.
  • Sprinkle remaining cheese on top and cover until melted.
  • Garnish with cilantro and serve with lime wedges.
