Directions:

  • Preheat a large Dutch oven over medium heat. 
  • Season the beef with salt and pepper.
  • Sear the roast in olive oil until browned on all sides. 
  • Remove and set aside.
  • In the same pot, sauté onions, garlic, carrots, and celery.
  • Return the roast to the pot. 
  • Add beef broth, thyme, and bay leaves.
  • Cover and simmer on low heat for 3 hours, adding potatoes in the last hour.
  • Remove the roast, shred, and serve with the vegetables and broth.
