    Directions:

    • In a saucepan, heat the broth over medium heat until simmering.
    • Reduce the heat to low to keep warm.
    • In a large skillet, heat olive oil over medium heat. 
    • Add onion and garlic, sautéing until softened and fragrant.
    • Add Arborio rice to the skillet, stirring to coat the grains with oil. 
    • Cook for 2-3 minutes until lightly toasted.
    • Begin adding the warm broth, one ladleful at a time, stirring constantly and allowing the liquid to absorb before adding more.
    • After about 15 minutes, add the shrimp to the risotto and continue cooking until the shrimp are pink and opaque.
    • Add butter and Parmesan cheese and stir until it starts melting and creamy. 
    • Season with salt and pepper to taste.
    • Garnish with fresh parsley and serve the Shrimp Risotto hot.
