- In a bowl, add meat, papaya paste, and salt.
- Let marinate for a couple of hrs.
- Roast red chilies, cumin, coriander seeds, and black peppercorn.
- Grind to a fine powder.
- Heat a large pan, add the marinated pieces, yogurt, lemon juice, ground masala, and green chilies.
- Let cook until the meat tenders.
- Fry sliced onions in a separate pan, until golden brown.
- Remove from oil and spread on a paper towel.
- Crush-fried onions and set aside.
- Transfer meat to a clay pot when water dries off.
- Add ghee, crushed brown onions, and lemon juice.
- Cover and let simmer for 10-15 mins.
- Give coal smoke and serve hot with naan.
