    Directions:

    • In a small bowl, dissolve the cornstarch in ½ cup of cold milk until smooth.
    • Heat the remaining milk in a saucepan over medium heat. 
    • Stir in sugar and vanilla extract.
    • Gradually add the dissolved cornstarch to the warm milk, whisking continuously to prevent lumps.
    • Cook the mixture, stirring constantly, until it thickens to a creamy consistency.
    • Remove from heat and add rose water if desired.
    • Pour into cups, sprinkle with cinnamon, and garnish with pistachios.

    Directions:

    Dry Fruit Lassi

    In a frying pan, add cashew nuts, almonds, pistachios, and dry roast for 1-2 minutes & let them cool.

    In the spice mixer, add roasted nuts and grind to make a powder & set aside.

    In the grinder, add yogurt, ground nuts, dates (deseeded), raisins, salt, milk, ice cubes, and honey, and blend until well combined.

    Garnish & serve!

    Coconut & Oats Lassi

    In the grinder, add yogurt, coconut milk, instant oats, honey, and ice cubes, and blend until well combined.

    Garnish & serve!

    Mint Lassi

    In the grinder, add yogurt, mint leaves, cumin seeds, salt, ice cubes, milk, and honey, and blend until well combined.

    Banana & Dates Lassi

    In the grinder, add yogurt, banana, dates (deseeded), cardamom powder, ice cubes, and milk, and blend until well combined.

    Custard Badam Sharbat is a delightful and refreshing drink that combines the richness of custard with the goodness of almonds (badam), making it a perfect choice for Ramadan iftar gatherings. This unique drink offers a creamy texture along with the nutty flavor of almonds, creating a satisfying beverage for breaking the fast.

    Here’s a new nourishing Custard Badam Sharbat recipe for you;

     

    Directions:

    • In a grinder, add almonds, and water and grind well to make a paste & set aside.
    • In a wok, add milk, bring it to a boil, and keep mixing in between.
    • Add almond paste and mix well.
    • Add almonds, and pistachios, mix well, and cook on low flame for 2-3 minutes.
    • Add qarshi ilacheen, mix well, cook on low flame for 4-5 minutes & keep mixing in between.
    • In a bowl, add custard powder, and milk and whisk well.
    • Gradually add dissolved custard, mix continuously, and cook until thickens (approx. 2-3 minutes).
    • Let it cool.
    • In a glass, add basil seeds, and water, mix well, and soak for 10-15 minutes.
    • In a jug, add ice cubes, soaked basil seeds, prepared sharbat, and mix well.
    • In serving glass, add ice cubes, sharbat & serve!

    Kashmiri Chai\Pink Tea

    Kashmiri Chai, also known as Pink Tea, is a traditional beverage originating from the picturesque region of Kashmir located in northern Pakistan. This aromatic and delicately flavored tea is renowned for its beautiful pink hue and rich, creamy texture, nutty and a bit salty. It’s so satisfying and warm during these cold, windy winter nights.

    Here’s a unique recipe to make Kashmiri Chai at home;

     

    Directions:

    • Pour 4 cups of water into a kettle/pan.
    • Add all the above ingredients and bring to a boil.
    • Let simmer for 30 mins.
    • Add 2 cups of cold water.
    • Take a ladle and start spooning the tea for 10 minutes. (beating or spooning the tea introduces air, which gives the tea its luscious pink color)
    • Let simmer for 5 mins.
    • Strain and set aside.
    • Can be stored in the refrigerator for 8-10 days.
    • Pour milk into a pan/kettle.
    • Add sugar and bring to a boil.
    • Add 1/3 cup of prepared tea mix in boiling milk. (or as required).
    • Add 2 tsp of crushed almonds and pistachios.
    • Pour into cups.       
    • Sprinkle some more crushed almonds and pistachios.
    • Enjoy hot

    • Bake in a preheated oven at 180 C for 15 minutes.
    • Let it cool.
    • In a pot, add milk, cream, sugar, and cardamom.
    • Whisk well and bring to a boil while stirring continuously.
    • Set aside.
    • Break the puff pastry into pieces.
    • In a separate baking dish add puff pastries.
    • Sprinkle nuts, sesame seeds, and coconut over pastries.
    • Pour boiled over the pastries and nuts.
    • Bake in a preheated oven at 180 C for 20 minutes.
    • Garnish with almonds and walnuts.

    • Fry until golden in color.
