20 Digestive Biscuits for more sweetness, use lotus cookies
3 tbsp Butter

The Ancient Greece-originated cheesecake is a soft, creamy layered dessert, the main thickest of which is a cream cheese layer spread on a crust or base made from crushed cookies (of choice).

However, this delightful and heavenly Cookie Butter Cheesecake made from crushed Speculoos or Biscoff cookies is one of the most favorite desserts.

Here’s the recipe for Delightful and Creamy Cookie Butter Cheesecake;

 

Directions:

  • Grind biscuits in a processor until powdery. 
  • Add butter to achieve a sandy texture.
  • Press the mixture onto the bottom of a round pan.
  • Refrigerate 1 hour.
  • Whip cream, until stiff peaks.
  • Add the cookie butter and cream cheese.
  • Beat until smooth.
  • Adjust sweetness by adding some powdered sugar. (if necessary)
  • Pour the mixture on the prepared crust.
  • Smooth the top with a spatula.
  • Decorate the top with cheese butter and cookies or as you want.
  • Refrigerate overnight or at least 3-4 hrs.
  • Serve chilled.
