Papusa, a traditional handmade stuffed corn flatbread declared as the staple and National dish of El Salvador, is a super flavorful and well-seasoned Salvadorian cuisine with various unique flavored and textured fillings showcasing the country’s rich and cultural heritage.
Here’s the recipe for this traditional Salvadoran Beef Papusa that has been passed down through generations;
Directions:
- In a large mixing bowl, combine Maize flour (or cornmeal), salt, and sugar.
- Gradually add warm water and mix until dough forms.
- Knead the dough for 5-7 minutes until it becomes pliable and smooth.
- Divide the dough into 8-10 equal pieces.
- Roll each piece into a ball and flatten it slightly into a disk shape.
- Place a tablespoon of seasoned ground beef.
- Sprinkle some chopped onions and chopped coriander in the center of each disk.
- Fold the dough over the filling and press the edges together to seal the Papusa.
- Brush the top with vegetable shortening.
- Repeat the process with all the dough balls.
- Cook the Papusa on a griddle on medium heat for 2-3 minutes on each side or until they are golden brown and crispy.
- Serve hot with your favorite salsa or curtido (a type of pickled cabbage).
