Directions:

  • In a large pot, cook the diced bacon until crisp (if using). 
  • Remove and set aside.
  • Sauté onion and celery in the rendered fat or butter until soft.
  • Stir in the flour, cooking for 1-2 minutes to form a roux.
  • Gradually add clam juice, stirring constantly. 
  • Add potatoes and cook until tender.
  • Stir in clams and cream, simmering gently for 5 minutes. 
  • Avoid boiling.
  • Season with salt, pepper, and garnish with parsley. 
  • Serve hot.
