Directions:

  • In a bowl, whisk egg yolks and sugar until creamy and pale.
  • In a saucepan, heat milk, cream, nutmeg, and cinnamon over medium heat until warm (do not boil).
  • Gradually whisk the warm mixture into the egg yolks, then return to the saucepan. 
  • Cook on low heat until slightly thickened. 
  • Remove from heat and stir in vanilla extract.
  • In a separate bowl, beat egg whites with 1 tablespoon sugar until soft peaks form. 
  • Gently fold the egg whites into the eggnog mixture for a frothy texture.
  • Serve chilled or warm, garnished with a sprinkle of nutmeg.
