½ Cup Butter room temperature
1 Packet Cream Cheese room temperature
4 Cups Confectioners Sugar sifted
1 tsp Vanilla Essence

Directions:

  • Grease and flour two 9 inch round pans.
  • In a bowl, mix together all the dry ingredients (flour, baking soda, cocoa powder and salt).
  • Set aside.
  • In a separate bowl, whisk together butter, and sugar.
  • Whisk until light and fluffy.
  • Add eggs (one at a time).
  • Add vinegar, vanilla essence and red food color.
  • Whisk well.
  • Add in the mixed dry ingredients in batches alternately with buttermilk.
  • Mix until well combined.
  • Pour the batter equally into the greased pans.
  • Preheat the oven to 175 degrees C (350 degrees F).
  • Bake for 30-35 mins or until an inserted toothpick comes out clean.
  • Let cool completely.
  • Remove from pans.
  • Set aside.

For Frosting:

  • Whisk cream cheese until smooth.
  • Add butter and continue whisking until smooth.
  • Gradually whisk in the confectioners’ sugar.
  • Add 1 vanilla essence.
  • Whisk until well combined.
  • Spread the frosting in between and on top of both the cakes.
  • Let sit in the refrigerator until set.
