Directions:

  • Rinse the sabudana under cold water until the water runs clear.
  • Soak it in water for 2-3 hours or until the pearls are soft and translucent.
  • Drain the soaked sabudana and add it to a saucepan with 2 Cups of water.
  • Cook over medium heat for about 10-12 minutes, stirring occasionally, until the pearls are completely transparent and cooked.
  • Drain and rinse under cold water.
  • Set aside to cool.
  • In a saucepan boil 2 cups of water.
  • Put all the gelatin crystals of banana jelly from the packet into the saucepan and stir until the crystals dissolve completely.
  • Transfer the jelly to a container or flat dish and let it cool.
  •  Place the container in the refrigerator and let it chill until the jelly is firm and set.
  • Repeat the process for pineapple and strawberry jelly flavors and refrigerate them separately.
  • Cut the jellies into cubes with the help of a knife and set aside.
  • Combine the chilled milk, sugar, and cardamom powder in a jug. Stir until the sugar is fully dissolved.
  • Divide the cooked Sabudana among serving glasses.
  • Add a tablespoon of rose syrup or Rooh Afza to each glass.
  • Pour the prepared milk and jelly cubes over the sabudana mixture.
  • Add ice cubes if desired.
