1 Cup Cheddar Cheese shredded, optional, For Garnish

Directions:

  • Heat olive oil in a large skillet over medium heat. 
  • Add the chopped onion and cook until translucent.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Add the ground beef, breaking it apart with a spoon. 
  • Cook until browned, draining any excess fat.
  • Stir in the tomato sauce, diced tomatoes, and tomato paste and mix well.
  • Add salt, black pepper, paprika, dried oregano, and dried basil. Stir to combine.
  • Pour in the beef broth and bring the mixture to a boil.
  • Add the elbow macaroni, stirring well. 
  • Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the macaroni is tender and has absorbed most of the liquid.
  • Once the macaroni is cooked, remove the skillet from heat. 
  • If desired, stir in shredded cheddar cheese until melted and combined.
  • Garnish with freshly chopped parsley.
  • Serve the beef and macaroni goulash hot, with extra cheese and parsley on top if desired.
