Here’s the recipe for Flavorful and Delicious Butternut Squash Soup;

 

Directions:

  • Preheat your oven to 400°F (200°C). 
  • Toss the cubed butternut squash with olive oil, salt, and pepper. 
  • Spread on a baking sheet and roast for 25-30 minutes, or until tender.
  • In a large pot, sauté the onion and garlic until soft. 
  • Add cumin, cinnamon, salt, and pepper, cooking for another minute.
  • Add the roasted squash to the pot, followed by the vegetable broth. 
  • Simmer for 10 minutes.
  • Blend the soup using an immersion blender until smooth. 
  • Stir in the cream, if desired.
  • Serve hot, garnished with fresh herbs.
