Here’s the recipe for Traditional and Satisfying Caldo Verde;

 

Directions:

  • Heat olive oil in a large pot over medium heat. 
  • Sauté the onion and garlic until softened and fragrant.
  • Add the potatoes and broth. 
  • Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  • Use an immersion blender or mash the potatoes in the pot until smooth.
  • Add the sliced chorizo and shredded kale. 
  • Simmer for 5–10 minutes until the kale is tender and the sausage is heated through.
  • Season with salt and pepper to taste. Serve hot with crusty bread.
