Here’s the recipe for Crunchy and Colorful Coleslaw;

 

Directions:

  • In a large bowl, combine the shredded green cabbage, purple cabbage, grated carrot, and sliced red onion.
  • In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar (or honey), celery seeds (if using), salt, and pepper. 
  • Adjust the seasoning to taste.
  • Pour the dressing over the shredded vegetables and toss until everything is evenly coated. 
  • Make sure the vegetables are well mixed with the dressing.
  • Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. 
  • The longer it sits, the better the flavors develop.
  • Serve cold as a side dish with your favorite meals.

Optional Variations:

  • For a lighter version, replace half the mayonnaise with Greek yogurt.
  • Add a handful of chopped fresh herbs like parsley or dill for extra flavor.
