Description
This self made appetizer or evening snack turned out really great and was too delicious.
Made these easy appetizing n yummy Eggplant Potato Bites from Mashed potatoes sandwiched between two slices of eggplant, coated with flour, beaten eggs n seasoned bread crumbs, then shallow fried them until crisp golden.
These delicious Eggplant Potato Bites can be served as an evening snack or an appetizer.
Here’s the recipe for Eggplant Potato Bites;
Directions:
- Slice eggplants and lay them on a clean kitchen towel or paper towel.
- Generously salt both the sides of eggplant slices and let rest for 15 mins. (to draw out excess water)
- In a bowl, mash potatoes.
- Add carom seeds, cumin, salt, red pepper powder, red pepper flakes and mix well.
- Wipe off water and salt from eggplant slices.
- Pick up 2 equal sized slices and sandwich a tablespoon of potato mixture in between the eggplant slices.
- Freeze for 15-20 mins to set.
- Place flour and 2 beaten eggs in separate bowls.
- Place seasoned bread crumbs in a bowl.
- Remove the eggplants from the freezer.
- Coat with flour, eggs and then in seasoned bread crumbs respectively.
- Coat once again with flour, egg n bread crumbs for more crisp.
- Heat oil in a wok and fry the stuffed eggplants until golden.
- Serve with your favorite sauce.
