Directions:
- Preheat the oven to 190°C (375°F).
- Simmer fish in milk with onion and bay leaves for 5 minutes.
- Remove fish, strain milk, and set aside.
- Boil potatoes, mash with butter, and season.
- In a saucepan, melt butter, stir in flour, and cook for 1 minute.
- Gradually whisk in reserved milk, add cream, mustard, and parsley.
- Simmer until thickened.
- Flake fish into a baking dish, pour sauce over, and top with mashed potatoes.
- Sprinkle cheese on top.
- Bake for 25–30 minutes or until golden.
