It consists of vegetables like tomatoes, bell peppers, and sometimes zucchinis, hollowed out and filled with a flavorful mixture of rice, herbs, and spices. This dish is hearty, comforting, and bursting with Mediterranean flavors.

This Gemista recipe offers a delightful blend of flavors and textures, making it a perfect dish for a wholesome Mediterranean-inspired meal.

Here’s the recipe for Delicious and Scrumptious Gemista;

 

Directions:

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the tomatoes and peppers, and scoop out the seeds and membranes.
  • In a bowl, mix cooked rice, chopped onion, garlic, parsley, mint, olive oil, salt, pepper, paprika, oregano, and tomato paste.
  • Stuff the mixture into the hollowed-out tomatoes and peppers.
  • Place the stuffed vegetables in a baking dish. Pour vegetable broth into the dish.
  • Cover the dish with foil and bake for 45-50 minutes, or until the vegetables are tender.
  • Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
  • Serve hot, garnished with fresh herbs.
