Directions:
- In a large bowl, combine the ground beef or lamb, chopped onion, minced garlic, parsley, cilantro, and all the spices (cumin, coriander, paprika, cinnamon, allspice, salt, and black pepper).
- Mix thoroughly until all ingredients are well incorporated.
- It’s best to use your hands to ensure an even mix.
- Divide the mixture into small portions and shape each portion into an oval or cylindrical patty about 3 inches long and 1 inch thick.
- If using skewers, shape the kefta around the skewers for easier grilling.
- For Grilling:
- Preheat the grill to medium-high heat.
- Brush the kefta with olive oil and grill for 4-5 minutes on each side until nicely charred and cooked through.

- For Pan-Frying:
- Heat olive oil in a large skillet over medium-high heat.
- Cook the kefta for 4-5 minutes on each side until browned and fully cooked.
