Here’s the recipe for Rich and Aromatic Moroccan Dish Kefta;

 

Directions:

  • In a large bowl, combine the ground beef or lamb, chopped onion, minced garlic, parsley, cilantro, and all the spices (cumin, coriander, paprika, cinnamon, allspice, salt, and black pepper).
  • Mix thoroughly until all ingredients are well incorporated. 
  • It’s best to use your hands to ensure an even mix.
  • Divide the mixture into small portions and shape each portion into an oval or cylindrical patty about 3 inches long and 1 inch thick.
  • If using skewers, shape the kefta around the skewers for easier grilling.
  • For Grilling: 
  • Preheat the grill to medium-high heat. 
  • Brush the kefta with olive oil and grill for 4-5 minutes on each side until nicely charred and cooked through.

OR

  • For Pan-Frying: 
  • Heat olive oil in a large skillet over medium-high heat. 
  • Cook the kefta for 4-5 minutes on each side until browned and fully cooked.

OR

  • For Baking: 
  • Preheat the oven to 400°F (200°C). 
  • Place the kefta on a baking sheet lined with parchment paper and bake for 15-20 minutes, turning halfway through.
  • Serve the kefta hot, garnished with extra chopped herbs if desired. 
  • Enjoy with pita bread, a fresh salad, or a side of rice, and a drizzle of tahini or yogurt sauce.
