Directions:
- Preheat your oven to 400°F (200°C).
- Prick the eggplants with a fork in several places and place them on a baking sheet.
- Roast for 30-40 minutes, turning occasionally, until the skins are charred and the flesh is soft.
- Alternatively, you can grill the eggplants for a smokier flavor.
- Remove the eggplants from the oven and let them cool slightly.
- Cut them open and scoop out the flesh, discarding the skins.
- Place the eggplant flesh in a colander to drain excess liquid for about 10 minutes.
- In a food processor, combine the drained eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and ground cumin.
- Blend until smooth and creamy.
- Season with salt to taste and blend again briefly.
- Transfer the Ghanoush to a serving bowl.
