Ghanoush is a classic Middle Eastern dip made from roasted eggplants, tahini, garlic, lemon juice, and olive oil. Directions:

  • Preheat your oven to 400°F (200°C).
  • Prick the eggplants with a fork in several places and place them on a baking sheet.
  • Roast for 30-40 minutes, turning occasionally, until the skins are charred and the flesh is soft. 
  • Alternatively, you can grill the eggplants for a smokier flavor.
  • Remove the eggplants from the oven and let them cool slightly.
  • Cut them open and scoop out the flesh, discarding the skins.
  • Place the eggplant flesh in a colander to drain excess liquid for about 10 minutes.
  • In a food processor, combine the drained eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and ground cumin.
  • Blend until smooth and creamy.
  • Season with salt to taste and blend again briefly.
  • Transfer the Ghanoush to a serving bowl.
  • Drizzle with a little extra olive oil and sprinkle with fresh parsley and paprika, if using.
  • Serve with warm pita bread, fresh vegetables, or as part of a mezze platter.
