Here’s the recipe for Colorful and Aromatic Ratatouille;

 

Directions:

  • Preheat the oven to 375°F (190°C).
  • In a pan, sauté onions and garlic in olive oil until soft.
  • In a baking dish, arrange the eggplant, zucchini, yellow squash, bell peppers, and tomatoes in alternating layers. 
  • Drizzle the sautéed onions and garlic on top.
  • Sprinkle thyme, salt, and pepper over the veggies, then cover with foil. 
  • Bake for 45-50 minutes until tender.
  • Garnish with fresh basil and serve hot. 
  • Ratatouille pairs beautifully with crusty bread or rice.
