    Directions:

    • In a pot, boil the chicken or beef until tender. 
    • Remove and shred (if chicken) or slice thinly (if beef).
    • Heat oil in a pan and sauté garlic, shallots, lemongrass, lime leaves, galangal, and spices until fragrant.
    • Add the sautéed mixture to the pot. 
    • Simmer for 20 minutes.
    • Serve the broth over glass noodles, meat, eggs, and bean sprouts. 
    • Garnish with fried shallots, cilantro, and lime wedges.
