2 lbs Beef cut into 1.5-inch cubes
2 tbsp Vegetable Oil
1 Large Onion chopped
3 Cloves Garlic minced
2 Medium Carrots peeled and chopped
2 Stalks Celery chopped
1 tsp Cumin (Zeera) Ground
1 tsp Paprika
½ tsp Caraway Seeds (Kala Zeera)
1 tsp Salt or acc. to taste
1 tsp Black Pepper freshly ground
2 Cups Beef Broth
5 Tomatoes diced
2 tbsp Tomato Paste
2 Bay Leaves
Fresh Parsley chopped

    Here’s the recipe for this Rich and Hearty Beef Goulash;

     

    Directions:

    • Heat oil in a large Dutch oven over medium-high heat.
    • Brown beef on all sides, in batches.
    • Remove beef from the pot and set aside.
    • Add more oil if needed, and sauté onion, garlic, carrots, and celery until tender.
    • Stir in cumin, paprika, caraway seeds, salt, and pepper.
    • Cook for about 1 minute.
    • Add broth, diced tomatoes, tomato paste, and browned beef.
    • Bring to a boil, cover, and let simmer for 2 & ½ hrs or until beef is tender.
    • Remove bay leaves and serve hot.
    • Garnish with chopped parsley.
    • Traditionally served with egg noodles or crusty bread.
    • Enjoy!
