Directions:
- Heat 1 tablespoon of oil in a pan and lightly sear the fish for 2 minutes per side.
- Remove and set aside.
- In the same pan, add remaining oil and mustard seeds.
- When they splutter, sauté onions, garlic, and ginger until golden.
- Add tomato puree, turmeric, cumin, coriander, and chili powder.
- Cook until oil separates.
- Pour in coconut milk and water, stirring well.
- Add fish back to the pan, cover, and simmer for 5 minutes.
- Finish with lemon juice and garnish with cilantro.
