Here’s a simple recipe to make your own Kumpir at home;
Directions:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly, prick them with a fork, and bake directly on the oven rack for about 1 hour, or until soft.
- While the potatoes are baking, prepare your fillings. Grate the cheese, dice the pickles, slice the olives, and cook and dice the sausage.
- Once baked, carefully cut a slit in the top of each potato.
- Scoop out the fluffy interior into a bowl, leaving the skins intact.
- Mix the potato with butter and cheese until smooth and creamy.
- Season with salt and pepper.
- Spoon the mixture back into the potato skins.
- Top each potato with corn, pickles, olives, sausage, and Russian salad.
- Drizzle with ketchup and mayonnaise if desired.
