Kumpir is a popular Turkish street food known for its deliciously loaded baked potatoes. It’s the ultimate comfort food, filled with a variety of toppings to suit any taste. Kumpir is versatile, so feel free to get creative with your toppings!

Here’s a simple recipe to make your own Kumpir at home;

 

Directions:

  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly, prick them with a fork, and bake directly on the oven rack for about 1 hour, or until soft.
  • While the potatoes are baking, prepare your fillings. Grate the cheese, dice the pickles, slice the olives, and cook and dice the sausage.
  • Once baked, carefully cut a slit in the top of each potato. 
  • Scoop out the fluffy interior into a bowl, leaving the skins intact.
  • Mix the potato with butter and cheese until smooth and creamy. 
  • Season with salt and pepper.
  • Spoon the mixture back into the potato skins. 
  • Top each potato with corn, pickles, olives, sausage, and Russian salad.
  • Drizzle with ketchup and mayonnaise if desired. 
  • Serve hot and enjoy!
