Description
Dahi Baingan is a simple tangy and refreshing dish made from pan-fried eggplants layered on with smooth and creamy yogurt, a spicy masala made from a few spices and finally tempered on with curry leaves, cumin, and whole red chilies.

Direction
- Soak sliced brinjals in salted water.
- In a bowl, mix yogurt, milk, salt, sugar, green chilies, coriander, and cumin.
- Mix well and set aside.
- Now remove the brinjals from the water and dry them on a paper towel.
- Heat oil in a pan.
- Fry brinjal slices until golden.
- Set aside.
- Pour a layer of prepared yogurt into a dish.
- Spread a layer of fried brinjal slices on yogurt.
- Pour the remaining yogurt on top.
- Heat ½ cup oil.
- Add tempering ingredients.
- Fry for a minute.
- Pour on top of yogurt.
- Serve with chapatis or rice.
